Ok….. I’m a s’mores addict and I’m making a s’mores cook book so I’ve come up with all kinds of fun s’more recipes that I’ve been trying!
This is my easy recipe for S’mores Rice Krispies. In my quest to find new ways to enjoy s’mores I remembered that my husband LOVES Rice Krispy treats! We all love fire roasted marshmallows and they’re such a fun part of our camping but we’ve decided to break free from traditional s’mores and try something a little bit different! Rice Krispy Smores Recipe
- 3 tablespoons butter or margarine
- 1 & 1/2 packages ( about 60) regular marshmallows
- – OR –
- 6 cups miniature marshmallows
- 6 cups Kellogg’s® Rice Krispies® cereal
(I’ve increased the marshmallow in this recipe for my Rice Krispy Smores!)
1. In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.
2. Add KELLOGG’S RICE KRISPIES cereal. Stir until well coated.
3. Using buttered spatula or wax paper evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Cool. Cut into the size of your graham cracker square.
4. Place on top of graham cracker and drizzle melted chocolate on top (Nestle Toll House Choc Chips are what we use). (Melt chocolate in your microwave adding teaspoons of oil to thin and stir to drizzle consistency)

Smores brownie recipe ingredients:
Graham cracker crumbs (they come in a box in the baking section, I prefer Keebler)
Brownie Mix (Like Betty Crocker)
Coconut Oil (you ca use butter if you prefer)
Marshmallows (bag of large size, I prefer Kraft)
On every box of graham cracker crust is a recipe for crust. My box called for butter but instead, to gives the smores a sweeter flavor I used coconut oil (better for you too!). Now on the brownie s’more you want a thick graham cracker crust – not a thin pie like crust. So, plan on making 1.5 to 2 times the amount the recipe calls for to get a good thick crust.
Here was my crust recipe for a standard 9.5 X 13 size pan
2 Cups Graham cracker crumbs
5 tbsp sugar (I prefer powdered sugar for this)
slighly over 1/2 cup Coconut oil
Mix and press into your pie shell or pan
Pour brownie mix on top (I prefer Betty Crocker) Instead of vegetable oil or butter in my brownie mix I used coconut oil as a replacement too!
Bake at 350 Degrees until brownies are 85% cooked (edges are cooked and just some left in the middle that needs to be finished baking. Then, carefully remove from oven and add marshmallows to the top covered all of the brownies. Finish making until brownies are cooked and marshmallows are golden. If you haven’t gotten the golden look by the time your brownies are done place your dish under the broiler 1 to 2 minutes!
Cut and serve after marshmallows have cooled!
