I had to go out for an appointment yesterday (I’m a stay at home mom) & my mother came over the watch the kids. When I returned she was in the middle of making this awesome homemade chicken & noodle soup for us! I was soo grateful. She made the fresh homemade noodles with my 3 year old daughter from a recipe that she kneeded in a ziploc baggie, rolled out, and then cut with a pizza cutter! It seemed so easy that I had to take a photo and post the recipe for you! Pin it for inspiration!
ok – for your soup and soup stock you can just follow whatever chicken soup base you would normally. I use the Knorr Soupstock condensed packets but that is just because I was able to get them so inexpensively a few months back when they were on sale and I had a coupon. You can use carton soup stock or make your own after you have a baked chicken one night. Whole chickens are on sale this week at Safeway for 79¢ per lb which is a GREAT price! You could buy a large one, have the chicken 1 night for dinner, then make this recipe with the leftovers for the next night.
Recipe for Homemade Chicken Noodle soup: (this is a cut & paste from my mom’s email to me)
1 cup flour, 1 tsp. salt, 1 egg, shake of white pepper, 3 tbsp milk. mix by hand until well blended (you can use a Ziploc baggie to kneed it in the bag). Roll out on floured cutting board, tabletop, etc., until your desired thickness. Using a pizza cutter or serrated knife cut out long slices the desired width you like. Narrow for noodles, wide for a dumpling like noodle. I cook chicken with carrots and celery, a little onion if you like, and when chicken is done remove from pot and put in noodles slowly and carefully and let them simmer until tender. While noodles cook, cut up chicken into bite size pieces and return to pot to heat a little before serving. If you are cooking fatty pieces of chicken I like to put the broth in the frig. and let the fat solidify and take it off before reheating the broth for noodles (makes for a lower fat more healthy recipe). I usually triple or quadruple this recipe for a family as 1 cup of flour would only make a very small amount. For extra flavor I put in a bouillon cube or two or use chicken stock.
