I had so much fun with my daughter tonight so I want to share my Roasted Pumpkin Seeds Recipe. It’s really easy to do and something that we look forward to every fall when we carve our pumpkins. And did you know the pumpkin seeds health benefits? I did a little research on our annual tradition and I was amazed at what at what a great super food pumpkin seeds can be! Nice!
1st) scoop out the guts from the inside of your pumpkin
2nd) pick out your pumpkin seeds from all of the pumpkin stringy stuff and place them in water
3rd) Ok now you want to do is wash your seeds really well. (They’re kind of slimy after they come out of the pumpkin)
4th) After you wash them you can dump them on a couple of layers of paper towels.
5th) Now that you’ve drained the majority of the water off of the seeds it’s time to grease your pan with a heavy layer of olive oil. Use a pan with sides like this. Now dump your seeds into the olive oil covered pan and use a spatula to mix the seeds in the oil. Add butter and sea salt
6th) Now bake on 400 degrees for 4 to 6 minutes – keep checking your oven – one’s they’re done they can burn really fast. If your oven wasn’t pre-heated you’ll need to cook them longer. They come out lightly browned but NOT burnt. Enjoy! They’re good for you!
