I love pumpkin – it’s such a great part of the fall season that I wish pumpkins were considered “seasonal” all year round instead of just in the fall season. Oh and did you know that pumpkins have great health benefits too? Yes! They are full of iron, minerals and even vitamin E. So this Thanksgiving you can feel good about eating your pumpkin bars! Lol!
My mom has been making pumpkin pies and pumpkin bars since I was born (I am the youngest of 6 kids). Well I have her special recipe. This is hands down the best pumpkin bar recipe that you can find.
It’s amazingly simple but absolutely delicious!. The prep time on this recipe is literally only 5 to 10 minutes and the pumpkin bars taste gourmet. Thanks for another great one mom! My sister at Kooky Carols Kitchen Concoctions and I have been following her recipes for years.
Best Pumpkin Bar Recipe Ingredients:
- 1tblsp Sugar (I’m a Dominos girl)
- 1 can Pumpkin Puree (I like Libby’s)
- 1 can condensed Milk (Eagle is my favorite brand)
- 2 Eggs (Egglands Best
- 1 and a 1/4 tblsp Pumpkin Pie Spice (McCormicks)
- 2 Pie Shell crusts (you can make your own or buy one like I did – I used Pillsbury)
Grease a pan with sides and line it with your pie crust.
Mix all of your ingredients well with a blender then pour into your shell. Bake at 350 Degrees about 25 to 40 mins (depending how deep or thin you make your bars) being sure knife comes out clean when inserted.
Allow bars to thoroughly cool before you cut.
Optional: Caramel Drizzle with nuts
Melt your caramels in the microwave (just for seconds) stir and drizzle over bars and quickly add nuts to wet caramel. Enjoy!
