Today is Shrove Tuesday or as some call it in modern days – Pancake Tuesday. It falls on March 4th, 2014 and marks the feast for the beginning of the Lenton season. Well if you’re planning to feast on a traditional dinner of pancakes tonight then you have to check out my easy pancake recipe that allows you to turn any generic pancake mix that says “just add water” into delicious pancakes that everyone will just love!
This recipe has been a secret in my mother-in-laws family for 2 generations but I finally have the recipe! This is the easiest and most delicious pancake recipe.
I love pancakes and so do kids so its such a great, fast breakfast in the mornings. Most pancake recipes just call for water and sometimes vegetable oil. Using coconut oil and an egg adds a wonderful flavor and nutritional value (protein from the egg) so kids don’t have a blood sugar crash before lunch.
Secret Delicious Pancake Recipe:
- 1/4 Cup coconut oil
- 1 egg
- 1 cup Hungry Jack pancake Mix (you can substitute for other pancake mixes)
- 1/2 Cup Milk
Directions:
Mix 1 cup Hungry Jack (or you can use another pancake mix), 1 egg, 1/2 Cup Milk and 1/4 Cup oil and then make pancakes as usual on stove or open camp fire. These are much more nutritious and delicious over just mixing with water. Makes about 6 pancakes.
You can even take it a step further and add a banana and fruit (see image above).
