Does this easy homemade zucchini Bread Recipe look easy or what? The only thing that could make it any better would be a 1/2 inch of butter cream icing! Lol
This delicious recipe is thanks to my friend Angela Gardner from Centerville, MD (she doesn’t have a blog to post it herself). She’s an inspiration to all with this delicious treat and she was gracious enough to share the recipe with me for all of my readers here on Family Frugal Fun. Most everyone I know has fresh zucchini coming out of their garden this time of year so if you’re at a loss with what to do with it all try this recipe for sure!

Ingredients for Easy Homemade Zucchini Bread –
- 3 cups of flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 baking powder
- 2 tsp cinnamon
- 3 eggs
- 2 cups sugar
- 1 cup Plain Greek yogurt (I use Chobani)
- 1 tbsp vanilla extract
- 2 cups grated, unpeeled zucchini (fresh from your garden is best!)
Directions – Preheat oven to 350 degrees. Mix the flour, baking soda, salt, baking powder and cinnamon in a bowl. Combine the eggs, sugar, yogurt, and vanilla in another mixing bowl, blend well. Add the dry ingredients and zucchini to the creamed mixture, blend well. Pour into a greased and floured loaf pan. Bake for 1 hr and 20 mins and there you have yummy, moist zucchini bread! Optional. Use two bread pans and bake @ 350 for 1 hr.
