It’s apple picking season and so it’s time for another yummy recipe – Easy Caramel Apple Pie Recipe.
Apples are so healthy and good for you and are a staple in the fall season just as much as pumpkins. A BIG thanks to reader Brandy W. of Easton, MD for sharing these awesome photos and her delicious recipe! I think her recipes are so wonderful she could open her own bake shop!
Caramel Apple Hand Pie Recipe
Ingredients:
- 2-3 cups chopped apples (we used Granny Smith and Honey Crisp)
- 1 can Ginger Ale
- 4 pie crusts (recipe below- or you can use refrigerated)
- 2 eggs
- ¼ cup sugar
- 1 tsp cinnamon
- 10-15 store-bought soft caramels, cut into cubes.
- Egg wash (1 egg lightly whisked with 1 Tablespoon water)
Directions: Peel and core apples and soak in Ginger Ale while making pie crust. The ginger ale will keep the apples crisp and keep them from turning brown before they are baked. (great little secret ☺)
Prepare pie crust using recipe below, or use store-bought refrigerated dough. Roll out to about a ¼ inch thickness and use a glass or cutter to cut out small “pies”.
Chop apples and toss with cinnamon and sugar. Place in the center of the pie crust and dot with small cubes of caramel.
Place a second round of pie crust on top and use egg wash to secure. A fork pressed around the edges works too. Optional- you can egg wash the entire top and dust with sugar and a leaf made from the pie crust scraps.
Line on a baking sheet and bake at 425 for about 15 minutes keeping a close eye on the coloring. Once a light brown and crispy looking crust appears, remove from the oven and allow to rest for at least 20 minutes before serving.
