If you’re looking for healthy meal choices try my original Easy Stuffed Peppers Recipe. This is a meatless dish that can be eaten alone (if you’re eating a plant based diet) or eaten with a protein (like a grilled piece of chicken) and this would be your starch and vegetable all in one. They have a beautiful presentation and taste delicious too!
Ingredients:
- Tuttorosso can of Italian Style Tomatoes
- Peppers (I like all colors)
- Rice
- Peas
- Salt (to taste – I use Pink Himalayan because it’s the most healthy)
- Pepper (to taste, McCormick Pepper is best)
Directions: Cook your rice according to directions of the package (the size box or bag that makes approximately 4 cups). At the end add 1 cup peas to the mixture. Add salt and pepper to taste.
Cut the tops of your peppers off and clean them out. Now slice an X mark on the bottom of the peppers.
Pour your can of Tuttorosso Italian Style Tomatoes into the bottom of your baking dish.
Place peppers standing up in your backing dish into the tomato sauce.
Fill with your rice and pea mixture. Bake 45 minutes to 1 hour until peppers has softened and soaked in some of the tomato sauce. Cheese on top is optional. Enjoy!
