Have you noticed all the sales on canned food this month? Well February is National Canned Food Month and so I’ve come up with a completely original recipe for easy Salmon Chowder. I made this recipe with canned foods purchased from my local Kent Island Safeway in Chester, MD.
Canned foods help you save prep time and get a healthy meal on the table more often. Plus, canned foods in your “cantry” mean that you can still have a great meal on the table even on the nights when you’re too tired or too busy to make it by the store. Canned foods lock in nutrients and bring fresh goodness from the farm to your table and typically cost anywhere from 15%-20% less than fresh. Those savings add up over the course of a year!!!
We’ve all faced times as parents that we needed to make dinner yet for one reason or another couldn’t make it out to the store (think sick kids). So, keeping a supply of canned foods eliminates that call for take out, saving your family money, and still puts a lovely meal on the table for your family. I grew up with my mom keeping a fully stocked “cantry” and it’s been a valuable lesson for me as a mom with my 4 children.
Below is my recipe for Salmon Chowder. This is what I consider a “meal soup” meaning that it’s a very thick hearty soup that really replaces a meal on a cold day. The salmon is full of Omega 3’s and protein and the cream and potatoes are well known as comfort foods making this meal soup a big hit in my home.
Salmon Chowder Ingredients;
- 1 Box Scalloped Potatoes (with seasoning package in box)
- 1 can Evaporated Milk (I used Signature Brand)
- 1 can Salmon (I used Signature Brand)
- 1 can Cream Corn (I used Signature Brand)
- 1 can diced tomatoes, drained (I used Signature Brand)
- 1 can full of Milk (use the evaporated milk can)
- 1 can full of water (use the evaporated milk can)
Directions:
In a sauce pan on low heat start with your 1st can of evaporated milk.
After you’ve poured in your 1st can of evaporated milk, use the same can and fill it with plain milk (any kind of milk will be fine). Pour that into your sauce pan and now fill that same can with 1 can of water and pour into your milk mixture.
Next add your can of cream corn. Fresh canned corn is sweet and delicious!
Now add your box of scalloped potatoes.
Next is your canned salmon – open can and de-bone (takes 4-8 minutes) then add to your soup mixture.
Drain your can of diced tomatoes and add only the chunks of tomatoes to your soup mixture. The fresh canned tomatoes give it a nice subtle flavor and adds a touch of healthy color.
Cook on low heat stirred frequently so as not to scorch on the bottom of the sauce pan. Enjoy!
