Okay well it’s back to school season and it’s time to think about moms and kids that are tired of sandwiches so this post is for you! Here are some back to school lunch ideas for ‘ya so your kids eat what you send and aren’t bored with lunch.
Now, I’m a home school mom but we still attend an all day home school cooperative where we have to pack a lunch and my oldest 2 kids (I have 4 kids) did attend school for several years before we started home schooling so I’m right there with you on trying to figure out what these kids will eat!
This taco salad is seriously easy and it keeps extremely well in any size Tupperware type container:
Taco Salad Recipe Ingredients:
- Salsa
- Grated Cheese
- Sour Cream (optional)
- Lettuce or spring salad mix
- Black Beans
- Can Corn
- Chips
Directions: Pile lettuce on the bottom, next add black beans drained, corn drained (about a 1/4 to 1/2 cup of each depending on if your child is a big eater or not), salsa, shredded cheese, dollop of sour cream. Pop your top on and send a small bag of chips for the crunch. I like to mix up the salad then take a form and plop some on a large corn chip and munch away. This is healthy and delicious and takes 5 minutes or less to make!
