If you’re into frugal diners and easy dinners this easy 1 pot roasted chicken recipe is both! Now most of you know a recipe for roasted chicken but I just wanted to give you a few quick dinner tips. The weather in spring is cool at night and nice in the day so this is a great 1 pot super easy dinner that anyone can make! Perfect to take the chill out of the air at night so you don’t have to turn on the heat in the spring. Squash will be on sale soon too since our southern states already have their seeds sown. What I like about this roasted chicken dinner is that it only took me about 10 minutes to prepare and I prepped it the night before because I knew I was going to have a busy day the next day yet I wanted a good home cooked meal for my family. Ok so on to the cooking tips for roasted chicken;
- Purchase a larger then usual whole roasting chicken and plan on making a chicken soup from the leftovers.
- Add some water to the bottom of your pan. This will help keep your chicken moist during baking and help with making your soup stock
- Think about rubbing or pouring a little olive oil over your chicken before you add your spices. It will help the spices to stick to the chicken and help to keep it moist and lock in the chicken juices
- If you’re a working parent & need to cook your chicken after you get home from work then cook on a very high heat for a shorter period of time – like 425° to 450° This will cut your cooking time and still deliver and great fast meal
- Be prepared with your soup ingredients like fresh vegetables and your crock pot then throw in the ingredients after dinner, cook low and slow and have your soup for dinner the next night. If you’re leaving for work in the morning be sure your crock pot is on low or all of your water will evaporate and you’ll burn your meal.
Whole roaster chickens by Perdue and other name brand poultry producers have been on sale for around 99¢ a lb or less all over the country. Between the vegetables, potatoes, chicken and soup, you should be able to make this dinner and your soup the next day (2 meals) for less then $10 bucks – no problem! Enjoy! If you need a quick recipe for 1 pot roasted chicken dinner: 1 Whole roaster 2 – 3 Cups water in bottom of roaster pan Olive oil rubbed/poured lightly on chicken Add your favorite seasonings (poultry seasonings are fine) Add vegetable & potatoes (carrots & potatoes are easy) You should find a recommended cook time on the chicken package or you can use the high heat instructions above. To help get the chill out of the air on a cool spring night just keep kids blocked out of the kitchen and leave the open door open after you remove your dinner. It’ll warm the area by 1 to 3 degrees!
