Here’s a delicious and easy idea for side dishes for your meals. These easy healthy side dishes take just minutes to make and include your starch and vegetables all in one dish making dinner faster, easier and tastier! You can eat this alone if you prefer some meatless meals or pop a chicken breast on your George Forman grill. Literally, it would make for dinner in about 15-20 minutes!
Ingredients for Veggie Potato Stir Fry
- Fingerling Potatoes (microwaved to soften)
- Red Peppers
- Onion
- Green Pepper
- Pink Sea Salt (freshly ground), ground pepper
- Green Beans or Snow Peas (optional)
Directions: Pop your fingerling potatoes in the microwave for about 4-6 minutes to soften. While those are in the microwave slice your peppers, onions and other vegetables. On stove pan (or Wok if you have one) add in some olive oil or coconut oil (about a 1/4 cup) and then toss in your veggies and potatoes (cut in half or thirds depending on size) and stir fry. Add pink sea salt and pepper to taste. Enjoy, serve with a chicken breast or go meatless for the night.
