I have the best EASY Enchilada recipe for ‘ya! This will be perfect if you’re planning Mexican foods for Cinco de Mayo with your family this year. Cinco de Mayo is on Monday, May 5th, 2014. I’ve been making these for years and my family LOVES them. They are super easy!
Ingredients for Easy homemade Enchilada Recipe:
- Enchilada Sauce (mild or spicy according to taste)
- Cheese (I use 2 cheeses – cheddar and monteray jack)
- Refried Beans (optional but suggested)
- Corn tortillas
Directions:
Fry your Tortillas in hot oil for several seconds. If you can’t immerse them then you’ll need to flip them over but emmersing is easiest and fastest. Remove from oil after they puff up (before becoming hard) and drain on a paper towel.
You can grate your cheese but if you have a block of cheese I think it’s just as easy to just cut it. After all it’s going to melt in the oven. Now place both kinds of cheese on the corn tortilla. Now is the time to add refriend beans (optional but suggested – I was making one batch with beans and 1 without).
Now start to roll over the side of the corn tortilla over the cheese. Kind of tuck it in under the cheese then keep rolling. Place rolled side down in a baking dish.
Pour enchilada sauce all over the rolled corn tortillas in their baking dish now. Add shredded cheese to top. Rotilla chili tomotoes are optional too (suggested for spice). Bake at 350 Degrees in pre-heated oven about 20 minutes. Serve with sour cream. Enjoy!
