Easy Tomato Salad Recipe
Here’s another good one. This recipe is great for a side dish at dinner or a light afternoon snack on a hot day. This easy tomato salad recipe is sure to be a hit for you and your family. it’s from my good friends at the Langer Household in Virginia! It’s quick, easy, and something your kids can help make. Take 20 minutes out of your day to make this healthy dish your family will enjoy. Here’s how it’s made.
The recipe:
- 1 1/2lbs tomatoes
- 5 ripe peaches
- 1 cucumber
- 1/4 Cup fresh basil (fresh mint can also be used)
For the Vinaigrette:
- 1/4 cup Cider Vinegar
- 1/4 cup Extra Virgin Olive Oil
- 1 tbs Honey
- 1 tsp Dijon mustard
- coarse kosher or sea salt & fresh-cracked black pepper to taste
Cut tomatoes into large cubes, sprinkle salt over cut tomatoes
Cut ripe peaches (skin still on) into comparably-sized cubes, add to bowl with tomatoes
Peel and cube cucumber, add to bowl with peaches and tomatoes
Mix Vinegar, EVOO, Honey and Mustard in bowl or tall mixing cup. Blend or emulsify with immersion blender or mixing want. Add salt and pepper to taste. Pour over tomato, peach, cucumber mix, and toss – then tear basil leaves and toss again until mixed.
Chill and serve.
