I am s’mores obsessed…..Oh its no secret – I LOVE the combination of chocolate, graham cracker and marshmallows so I make all sorts of s’mores bars and gourmet s’mores recipes. I don’t want to only have s’mores around a campfire so I’ve done my best to come up with indoor s’mores, outdoor campfire s’mores and everything in between. Well this is my latest gourmet s’mores recipe and its delicious! Its a take from a German Chocolate cake …… Check it out!
Gourmet S’mores bars ingredients:
- Betty Crocker Brownie Mix
- Coconut oil
- Eggs
- Honey Maid graham crackers
Gourmet S’mores bars topping ingredients:
- Kraft Marshmallows
- 4 Egg yolks
- 1 cup sugar
- 1 cup Carnation evaporated milk (canned)
- 12 tablespoon butter, cut into small pieces and softened
- 1 teaspoon vanilla extract
- 1 1/3 cup sweetened shredded coconut
- 1 cup coarsely chopped pecan
Brownies-Bars: Follow directions on your Betty Crocker Brownies except you’ll want to decrease the water by half and increase the coconut oil to make up for the decreased water. This will make a really chewy, moist brownie. Now, grease your pan very lightly with the coconut oil. Line the bottom with graham crackers. Add your brownie mixture to the top and bake according to instructions.
The above picture is what it looks like after baking and flipping it over so you can see the bottom of them. This is MUCH easier then doing a graham cracker crust because it cuts well and stays together.
Topping
Whisk together the egg yolks and sugar in a 2 quart saucepan until thick, about 2 minutes. Whisk in the milk, butter, and chocolate. Cook over low heat, stirring constantly until it is smooth and thick enough to lightly coat a spoon, about 5 minutes. Keep heat low or egg yolks will scramble. If this happens, you’ll have to strain. Remove pan from heat and stir in the vanilla, coconut and pecan. Let the frosting cool to room temperature. Now add your marshmallows and mix. Cover brownies with topping. Enjoy!
