If you love s’mores like I do then you may like to check out my Halloween s’mores recipe. Its a brownie s’mores recipe with an orange top for Halloween. There’s just nothing like the combination of marshmallow, graham cracker and chocolate! Yum!
I think s’mores are good for any occasion so I figured this would give indoor s’mores a new twist with the orange marshmallow topping.

I always link my pans with parchment paper so I can pop out the brownies quickly and easily.
I made a nice thick graham cracker crust according to the direction on the box with 1 exception – I added 2 additional tblsps of butter to the recipe.
I used a cheap Pillsbury brownie box mix that I was able to snag for free with coupons to make this fast & easy but instead of following the directions for 2 eggs, water and oil, I used only oil and eggs with a slight increase in the oil. Its makes it really thick and keeps the brownies super moist with a great consistency (as you can tell form the photo). Coconut oil is my favorite for brownies. It is healthier AND it gives them a great flavor. You can’t taste the coconut (just in case you’re wondering) but it does make them a bit sweeter.
Now bake your brownie box mix (and the graham crust they are on) according to the box directions. I always use a cake tester to make sure anything I’m baking is done.
Use regular sized marshmallows, clip them in half with your kitchen scissors, then use orange food color on them. Cover the top of your baked brownies and place under your broiler. The timing on this is fast so place under the broiler and wait for them to toast and pull them out before you burn them. It will be anywhere from 25 seconds to a min and a half depending on how close you have them to the heat.
Allow to cool completely. Pull up the sides of your parchment paper and your brownies should lift out of the pan. Cut in squares or however you’d like. Here’s a close up of what mine looked like after they were cut.
