Red Velvet Peeps for Easter. Adorable! Well you know it’s a RARE day that I do anything in my kitchen without my little Samantha (who is now 5 years old) so I’m thinking these may not look quite as perfect as Kooky Carol’s do but we’ll have much more fun making them. I’m a home school mom so allowing kids in my kitchen is all part of their education. It teaches them so much like science, math and home economics too! It’s a REAL life education because, well lets face it, how many people do you know with a personal chef? So, chances are she’ll be making her favorite foods for her family too!
Anyway – here are the directions for your fun Kids Easter Treats:
Ingredients
- 1 box Duncan Hines Red Velvet Cake Mix
- 2 large eggs
- 1/3 cup Smart Balance oil
- 1 can of Duncan Hines Cream Cheese Frosting
- 1 cup of Coconut Flakes
- Peeps
- 1 Tbsp milk
Instructions
- Mix cake mix, eggs and oil together.
- Roll into 3″ balls and set 3″ apart on parchment paper on cookie sheet.
- Bake at 375° for 10 minutes and let cool completely.
- While cookies are cooling combine milk, food coloring and coconut flakes in a sandwich sized zipper seal bag and shake until mixed well. Set aside.
- Frost top of cookie with icing and top with peep.
- Sprinkle surrounding frosted areas with coconut.
Preparation time: 30 minute(s)
Cooking time: 10 minute(s)
Makes about 20 cookies.
