It happens to everyone at some time or another – you think to yourself, “If I have to make one more peanut butter and jelly sandwich I’m going to scream!” Well I have a very simple and delicious answer to help you with your family lunch rut. These lunch ideas are simple and nutritious yet take only minutes to make – I know that is what every mom wants….. A little more time, good nutritious food your kids will eat, and a minute to relax and breathe, right? Well here’s a way to make 4 individualized meals in 5 minutes! Take a breath moms, I’ve got you covered!
My kids are into so many activities that during the school year we’re eating foods out of a cooler 4 days per week so why not make them easy and tasty? Not everyone wants a wrap, or a traditional sandwich on bread – You’ve got to be creative and individualized to please everyone in your home. But, you don’t want to take up all of your precious time making the individualized food. There’s nothing more frustrating to a mom than to go to pack a lunch one morning only to find yesterdays lunch was barely touched! We’ve all been there!
4 Lunches in 5 minutes
Ingredients:
- 1 rotisserie chicken (Remember these frequently go on sale at your local Safeway store)
- 1 heaping spoon sour cream (we used Lucerne brand at Safeway)
- 1 heaping spoon mayo
- 1/2 cup cranberry raisins
- 1 rib celery (chopped)
- 1/2 cup sliced almonds (We purchased in bulk in the produce section at Safeway)
- 1 rib spring onion (chopped)
4 different lunches:
- Wraps
- on crackers (We used Signature Kitchens)
- bread (We used Signature brand)
- on a bed of lettuce (We used O Organics pre-washed lettuce)
Optional fun Lunch Add Ons:
- grapes
- clementines
- nut & protein bars (Signature brand)
- Refreshe bottled water
LOW FAT OPTION:
- Low fat Mayo
- Low fat or no fat sour cream
