If you love potatoes and want to make a really delicious soup very fast then you have to try my Scalloped Potatoes Recipe for Scalloped Potato Soup! Everyone that tries it LOVES it! It is sooooo delicious and super, super easy to make. My husband loves a good hearty potato and he loves this soup recipe and I promise you will too! Frugal living is all about good home cooking!
Scalloped Potato Soup Recipe Ingredients:
- 4 to 5 cups Milk (whole milk makes it thicker, creamier but if you’re going for a low fat version use skim or 1% or 2%)
- 1 Box Scalloped Potato Mix by Betty Crocker
- 1 Can Green Giant Sweet Corn
- 1/2 lb of Bacon
- 4-6 tbsp Butter
IN a 6 quart pan or crock pot (just anything large enough to hold the soup) add your milk, box of Betty Crocker Scalloped potatoes, canned corn and butter on low heat stirring to avoid scalding and burning your milk. After your potatoes have softened in the warm milk turn to medium heat and continue to stir just enough that nothing sticks but not so much that you make all of your potatoes mushy. Fry your bacon before hand(or bake your bacon here). Crumble, then add to soup. Continue stirring and keep on heat until potatoes are soft to eat. Soup is delicious and really easy to make! You will love it!
This soup is relatively inexpensive to make especially if you buy your bacon and ingredients on sale.
