Ohh my these are delicious…. A little different from traditional s’more like we had this past week when we were camping but oh so delicious! If you like York Peppermint Patties then this S’mores recipe is for you!
These were really fun to make and a nice treat! Did I tell you I’m a s’mores addict? Yep… there’s just something oh so perfect about the combination of graham cracker, chocolate and marshmallow. It just goes together so perfectly!
Ingredients
- 1/2 cup butter, softened
- 1/2 cup packed brown sugar
- 1/4 cup sugar
- 1 egg
- 1 teaspoon vanilla
- 1 1/4 cups flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup graham cracker crumbs
- 16 – 22 York Peppermint Patties
- 1 1/2 cups marshmallow fluff (approximate, you’re just covering the peppermint patties)
Directions
Preheat the oven to 350 degrees. Line an 8×8 baking dishing with parchment paper; coat lightly with cooking spray (or oil – I use coconut oil).
In a large bowl of the bowl of stand mixer, beat butter and sugars until fluffy. Beat in egg and vanilla until combined. Scrape down the sides. With the mixer on low, stir in the flour, baking powder, salt, and graham cracker crumbs until mixed.
Spread 2/3 of the dough on the bottom of the prepared baking dish. Lightly press the peppermint patties into the dough.
Spread marshmallow fluff on top.
Press the remaining dough on a non-stick surface into the shape of an 8×8 square. Place the square on top of the fluff and press down lightly.
Bake for 20-25 minutes or until the edges just begin to brown. Allow to cool completely…. to give the bars a chance to set. Remove from the pan and cut into squares with a large, sharp knife. Enjoy!
Tips: I used parchment paper under my s’mores. I also placed the fluff in a ziploc baggie and then clipped off the end and piped it onto the York Peppermint Patties (easier that way).
Need S’more supplies? Check these out for traditional campfire s’more! My personal favorite is the S’mores maker (below) These work well and I have several readers that have used them for s’mores!
1st toast your marshmallows. You can toast them over a campfire or under your broiler. Note – They toast FAST!
Here’s a link to campfire s’mores roasting sticks. I like these best because its a double tip to hold the marshmallow on (sometimes they fall off a single tip)
melt your chocolate. This is a little more difficult over a campfire but still possible. Now take your marshmallow and your butterfinger and place it between your graham crackers. YUM@ These campfire s’mores makers really do work and give a good visual of how to do s’mores over a campfire!
And last but not least…. if you can’t get out to make your s’mores make them at home in your microwave! ☺Inside Microwaveable S’mores maker! Just $7.19 each!
